3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1 teaspoon salt
2 teaspoons dried thyme
1/2 teaspoon cracked black pepper
1/2 cup grated Asiago cheese
12 ounces dark lager
Preheat oven to 375 degrees. Sift flour, baking powder, sugar and salt. Mix in a large bowl with thyme, pepper and grated Asiago cheese. Slowly stir in dark lager and mix just until combined. Batter will be thick and a little lumpy.
Liberally grease an 8-inch cast iron skillet (or 8-inch baking dish) with butter. Spread batter in greased skillet, brush with melted butter if desired, and bake until golden brown. Test for doneness after 35 to 45 minutes, using a toothpick stuck in the center; bread is done when toothpick comes out clean.
Cool in the skillet on a rack for 10 minutes. Remove from pan while still warm and cut into wedges to serve.
